Crepes !

My parents made crepes for my sister and I when we were younger and we always absolutely LOVED them. The thin pancake-like confections ready to be filled with jelly (for me) and confectioners sugar (for my sister) were a weekend morning favorite. I eventually learned how to make them myself and sometimes when I’m in the mood for crepes I’ll whip up a batch. We usually follow the Joy of Cooking recipe but I just made up my own sort of for this batch.

My crepe recipe:

  • 1 cup flour
  • 1 1/4 cup milk
  • 2 eggs
  • 2 tbsp butter
  • pinch of sugar

You can leave out the sugar if you want a slightly less sweet batter. I filled mine with apricot jam and strawberries but crepes are good with almost anything.
