Fried Mini Burritos


I just tried this recipe I found on my foodgawker app. I simplified the whole recipe and cut out a lot of the ingredients just because I didn’t have them and was using what I had in the kitchen already. The original recipe can be found here.



For the filling:

  • refried beans
  • caramelized onions
  • jack cheese

For the sauce:

  • one avocado
  • yogurt
  • lime juice
  • salt

I caramelized the onions and then mixed them in with the beans and cheese in a bowl. I mixed the sauce ingredients in a mini food processor to get a nice creamy consistency. I put two spoonfuls of the filling into half a tortilla and rolled it up. The original recipe suggests holding it together with a toothpick to keep the roll from coming apart but I didn’t use a toothpick and it wasn’t a problem. I heated about 1/2 of canola oil in a pot (make sure the oil is hot enough so the tortilla doesn’t end up soggy with oil) and put in the burrito until it was crispy brown on one side and then rolled it over to evenly brown the whole thing. The whole operation took less than 20 minutes and the result was delicious.
